This recipe was inspired by one of my favorite meal delivery kits, but I have adapted it to make it all my own! This baked creamy cheddar Buffalo chicken is wildly easy to toss together, and it is a total crowd pleaser. Simply add more Buffalo sauce to change up the heat level, or leave it off entirely for a creamy, cheesy chicken recipe.

INGREDIENTS
4 oz. softened cream cheese
3 tsp ranch dressing seasoning, separated
4 boneless skinless chicken breasts
1 medium head broccoli, cut into small florets
1 medium red onion, diced
1 tsp olive oil
1 cup cheddar cheese, shredded
2 oz. crème fraiche
2 oz. Buffalo sauce (to taste)
2 to 3 green onions, diced
INSTRUCTIONS
Preheat oven to 375 degrees F.
Blend cream cheese and 2 teaspoons of ranch dressing seasoning to create a ranch cream cheese. Then pat chicken breasts dry.
Coat raw broccoli florets and diced red onion in olive oil and season with 1 teaspoon of ranch seasoning. Put into the DuraLite Bakeware dish. Add the chicken breasts and spread the ranch cream cheese mix on top of the chicken breasts.
Sprinkle 3/4 of the shredded cheddar cheese on top and bake for 25 to 30 minutes.
While the chicken bakes, combine the crème fraîche with the Buffalo sauce. Use Buffalo sauce to taste; less to make the dish less spicy.
Cook chicken breasts to an internal temperature of at least 165 degrees F. When done, remove from the oven and top with the remaining 1/4 cup of shredded cheddar cheese.
Drizzle the Buffalo crème fraîche mixture on top, and garnish with the preferred amount of diced green onion.
